Podaję moje trzy ulubione wersje: z sokiem z cytryny, z octem winnym i cebulką.
Z sokiem z cytryny:
- 1 łyżka soku z cytryny- 4 łyżki oliwy z oliwek lub oleju
- szczypta soli morskiej
- świeżo zmielony czarny pieprz
- 1 łyżeczka musztardy (dowolnie)
Do miseczki wlać sok z cytryny, dodać sól. Wymieszać aż sól się rozpuści. Dolać oliwę, mieszać aż składniki się połączą. Doprawić świeżo zmielonym czarnym pieprzem. Jeśli przygotowujemy sos z musztardą, należy ją wymieszać z solą i sokiem z cytryny, następnie wlać olej.
Z octem winnym:
- 1 łyżka octu winnego- 3 łyżki oliwy z oliwek lub oleju
- szczypta soli
- świeżo zmielony czarny pieprz
Do miseczki wlać ocet winny, dodać sól. Wymieszać aż sól się rozpuści. Dolać oliwę, mieszać aż składniki się połączą. Doprawić świeżo zmielonym czarnym pieprzem.
Z cebulką:
- 1/2 małej szalotki, dymki lub cebuli (bardzo drobno posiekana)- 1 łyżeczka musztardy Dijon
- 1 łyżka octu winnego
- 6 łyżek oliwy z oliwek
- 1 szczypta soli
- 1 łyżka świeżych ziół (opcjonalnie; tymianek, bazylia, oregano, natka pietruszki; drobno pokrojone)
Szalotkę zasypujemy solą i odstawiamy na 5 minut.
W miseczce zalewamy posoloną szalotkę octem winnym i odstawiamy na 1-2 godziny do marynowania (możemy na krócej, jeśli nie mamy czasu).
Do szalotki z octem dodajemy musztardę dijon i mieszamy całość.
Pod koniec dodajemy oliwę z oliwek i całość mieszamy energicznie tak długo, aż wszystkie składniki dokładnie się połączą.
Jeśli sos jest zbyt ostry, można rozcieńczyć go delikatnie dodatkową oliwą i dosypać odrobinę soli. Jeśli zbyt łagodny – dodać odrobinę więcej musztardy.
Tuż przed polaniem sałaty do sosu możemy dodać świeże, drobno pokrojone zioła.
